Ingredients
- 2 cans chopped tomatoes
- 1 TB tomato paste
- 1TB brown sugar
- 1/4 cup chopped fresh parsley
- 2 tsp dried oregano
- 1 TB fresh thyme leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 6-8 sausages (can make it work with 5 if husband gets it wrong at the supermarket)
- 2 large sweet potatoes
- 1 punnet cherry tomatoes
Instructions
Preheat oven to 360 degrees F. In a large baking dish, combine the chopped tomatoes, tomato paste, brown sugar, parsley, vinegar, oregano, thyme, salt and pepper.
Add the raw sausages to the dish. Toss sweet potatoes in bowl with a little olive oil and press around the sausages.
Scatter cherry tomatoes over and season with salt and pepper. Bake for 45 minutes.
