Saucy Noodle Stir Fry

Ingredients

  • 700g sirloin steak, cut into strips
  • Peanut, avocado or grape seed oil for frying
  • 2 onions roughly chopped
  • 3 sticks of celery roughly chopped
  • 5 cloves of garlic roughly chopped or crushed
  • 3 teaspoons fresh ginger
  • 2 large chilies
  • 400g stir fry noodles
  • 1 head of broccoli chopped into small florets
  • 3 spring onions
  • 1 carrot peeled and chopped

Sauce

  • 1/2 cup soy sauce
  • 1/3 cup water
  • 2 tbsp oyster sauce
  • 1 1/2 tbsp cornflour mixed with 2 tbsp water
  • 1 tbsp brown sugar
  • 2 tsp sesame oil
  • 1 tsp white vinegar
  • 3/4 tsp white pepper

Directions

Combine the sauce ingredients in a jug and have it ready. Heat the pan on high and season meat with salt and pepper.

When the pan is hot add two tablespoons oil and sear the meat.

Remove meat and place onion and carrot in the pan. Cook for a few minutes then add celery and cook for another couple of minutes. Toss in garlic, ginger and chili and stir fry for another minute. Add the noodles and broccoli and stir fry for another minute.

Tip the meat and the resting juices back into the pan. Stir in sauce ingredients. Cook for a few minutes, stirring occasionally until noodles are hot, veges are tender and the sauce is thick and shiny. Green onions for garnish.
