Goulash

Ingredients
- 1kg chuck beef cut into 4cm pieces
- 2TB extra virgin olive oil
- 3 carrots coarsely chopped
- 2 leeks coarsely chopped
- 2 sticks celery coarsely chopped
- 1 red capsicum
- 6 cloves garlic
- 2 TB smoked paprika
- 1 TB sweet paprika
- 1 ts chili flakes
- 1/2 bunch rosemary
- 1 bunch parsley – separated
- 1 litre stock
- 400ml passata (1 can)
- 4 medium potatoes quartered
Steps
- Toss beef in flour and brown in pan. Remove and set aside.
- Heat oil on med heat in pan and add veggies. Sir in both paprikas. Cook 1 min and add in chili flakes, rosemary, parsley and stock. Bring to boil.
- Reduce heat and simmer for 1 1/2 – 2 hours. Stir in fresh parsley.
