Cucumber, Strawberry & Basil Salad

Dressing
- 1 tablespoon balsamic vinegar
- 1 tablespoon brown sugar
- 1 tablespoon EVOO
- 1 clove of garlic, crushed
- Salt & pepper
Salad
- 1 medium sized red onion
- 1/4 tsp salt
- 1/4 sugar
- 1 tsp red or white wine vinegar
- 1 telegraph cucumber
- 1 punnet strawberries
- 2 baby cos lettuces
- 1 cup alfalfa sprouts
- 1 large avocado, thinly sliced
- 1/2 cup basil leaves, roughly torn
- 1/2 chopped walnuts
Steps
- Whisk all the dressing ingredients together in a bowl until the sugar is dissolved. Set aside.
- Peel the red onion and slice thinly. Place in a small bowl with salt, sugar and vinegar or lemon juice. Toss to combine and leave to sit for 10 minutes until pickled.
- Use a peeler to carve large strips out of the cucumber, stopping when you reach the seeds. Discard the very outer skins.
- Cut the strawberries into quarters. Season with a little salt and pepper and set aside.
- Tear lettuce into pieces, arrange in a large bowl or platter and layer with the cucumber strips, sprouts, red onion, avocado, strawberries, basil and walnuts.
- Just before serving, drizzle dressing over the salad or let people dress on their own.
