Cucumber, Strawberry & Basil Salad

  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon EVOO
  • 1 clove of garlic, crushed
  • Salt & pepper

Salad

  • 1 medium sized red onion
  • 1/4 tsp salt
  • 1/4 sugar
  • 1 tsp red or white wine vinegar
  • 1 telegraph cucumber
  • 1 punnet strawberries
  • 2 baby cos lettuces
  • 1 cup alfalfa sprouts
  • 1 large avocado, thinly sliced
  • 1/2 cup basil leaves, roughly torn
  • 1/2 chopped walnuts

Steps

  1. Whisk all the dressing ingredients together in a bowl until the sugar is dissolved. Set aside.
  2. Peel the red onion and slice thinly. Place in a small bowl with salt, sugar and vinegar or lemon juice. Toss to combine and leave to sit for 10 minutes until pickled.
  3. Use a peeler to carve large strips out of the cucumber, stopping when you reach the seeds. Discard the very outer skins.
  4. Cut the strawberries into quarters. Season with a little salt and pepper and set aside.
  5. Tear lettuce into pieces, arrange in a large bowl or platter and layer with the cucumber strips, sprouts, red onion, avocado, strawberries, basil and walnuts.
  6. Just before serving, drizzle dressing over the salad or let people dress on their own.
