Cheesy Chicken Gnocchi Soup

Ingredients (makes 4 servings)

  • 1lb large chicken breasts
  • Salt
  • Pepper
  • 1 tbsp Garlic powder
  • 1 tbsp Cayenne pepper
  • 1 tbsp Red pepper flakes
  • 1 tbsp Thyme
  • 1 tsp Basil
  • 1 chopped onion
  • 4 chopped garlic gloves
  • 1 TB olive oil
  • 3 tbsp tomato puree
  • 6 chopped sun dried tomatoes
  • 1L chicken stock
  • 2 cups natural yogurt
  • ½ cup grated Parmesan
  • 1lb gnocchi
  • Handful of spinach

Method

  1. Beat down chicken breasts until thin, then coat with all seasonings
  2. Add olive oil to large saucepan, then add the seasoned chicken. Cook both sides for 7-8 minutes, then remove.
  3. In the same saucepan, add the onion, garlic, tomato puree, sun dried tomatoes and chicken stock and simmer for 15 mins.
  4. Then add the yogurt and Parmesan, stir and simmer for a further 20 mins.
  5. Add the cooked chicken, gnocchi and spinach and simmer for 5 mins.
