Cheesy Chicken Gnocchi Soup
Ingredients (makes 4 servings)
- 1lb large chicken breasts
- Salt
- Pepper
- 1 tbsp Garlic powder
- 1 tbsp Cayenne pepper
- 1 tbsp Red pepper flakes
- 1 tbsp Thyme
- 1 tsp Basil
- 1 chopped onion
- 4 chopped garlic gloves
- 1 TB olive oil
- 3 tbsp tomato puree
- 6 chopped sun dried tomatoes
- 1L chicken stock
- 2 cups natural yogurt
- ½ cup grated Parmesan
- 1lb gnocchi
- Handful of spinach
Method
- Beat down chicken breasts until thin, then coat with all seasonings
- Add olive oil to large saucepan, then add the seasoned chicken. Cook both sides for 7-8 minutes, then remove.
- In the same saucepan, add the onion, garlic, tomato puree, sun dried tomatoes and chicken stock and simmer for 15 mins.
- Then add the yogurt and Parmesan, stir and simmer for a further 20 mins.
- Add the cooked chicken, gnocchi and spinach and simmer for 5 mins.
