Carrot Cake

Cake ingredients

  • 5 eggs
  • 1 3/4 cup castor sugar
  • 1 1/2 cup rice bran oil
  • 2 cups plain flour
  • 1 cup self raising flour
  • 2 tsp baking soda
  • 3 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 3 cups grated carrot

Icing ingredients

  • 3 cups icing sugar
  • 75 grams softened butter
  • Juice of one lemon
  • 250 grams cream cheese

Directions

Preheat oven to 160C or 320F. Crack eggs into large bowl, add sugar and whisk to disolve. Add oil. Mix to combine. Sift in dry ingredients. Fold in carrot. Bake for 1.5 hours, checking after 1 hour 10 minutes.
